During gameplay, pause the game (press Start) then hold L1 + R2 + DOWN + trIANGLE . Release the buttons, then quickly enter these buttons:

CIRCLE, UP, SQUARE, trIANGLE, RIGHT, DOWN

The "Skip level" and "Level selection" options will now appear everytime you pause the game.
